Cherry Pancakes
German cherry pancakes, another solid favorite from my dad’s kitchen arsenal. I’m honestly not even sure if these are actually of German origin, but that’s what we’ve always called them. This recipe is a solid camp recipe, it uses simple ingredients, and cooks great in a cast iron over the fire. If you have limited power, propane, etc. at a camp, feel free to sub evaporated milk in a can for the fresh stuff. We’ve done it both ways, and really haven’t noticed a difference in flavor or texture.
Ingredients
- 2 cups milk
- 1 egg
- 1/2 tsp vanilla
- 2 cups flour
- 1 tsp sugar
- 1 can tart cherries
Directions
Mix milk, eggs, vanilla, and sugar well. Slowly add flour and mix. Drain cherries and fold into batter. Ladle into a pan sprayed with Pam. Flip when edges are no longer runny and the middle is bubbling, on medium low heat.
Tart cherries can be a tough one to find, and trust me when I say, you can’t just substitute other cherries in this recipe. I’ve done the grunt work of trying several different brands and types of cherries and I prefer either of the following brands for cherries.
