Beef Wellington has always been one of those recipes that wow dinner guests for me. If it’s cooked right, it’s in my top five all time favorite foods. So I started messing with a game Wellington recipe, and let me tell you, this one doesn’t disappoint. For me it’s the perfect savory Wellington without being too complex.

There’s two different cuts of meat you can use for this one; either a tenderloin or tenderized steak. I prefer the tenderloin for a dinner with guests, but the tenderized steak is much easier to come by. Your cooking methods will vary a bit with the cuts, and you’ll find instructions for each below.
